Recipe: Blackberry ice-cream pie

The Blackberry Festival street party will once again occupy Marine Avenue between Duncan and Alberni streets in Powell River on Friday, August 15. Tasty treats will be in abundance. The photo above was taken near Alberni Street at last year's event.

With the annual Blackberry Festival Street party set for Friday, August 15 (6 to 11 pm), on Marine Avenue in Powell River, here's a blackberry-themed dessert to suit the occasion (and any other time of year, really).

Blackberry ice-cream pie

Ingredients:
1/4 cup of sugar
2 and 1/4 cups of frozen blackberries
One teaspoon of grated orange peel
One teaspoon of cornstarch
1/2 teaspoon of cinnamon
One litre of softened vanilla ice cream
One nine-inch cookie-crumb pie shell (prepared)

Everyone will love this easy to prepare "berry-licious" dessert. Freeze blackberries in a single layer on a cookie sheet. With frozen berries on hand, this recipe can be made anytime of year, not just at harvest time or around Blackberry Festival. As an option, substitute blackberries with frozen blueberries, raspberries, strawberries or any combination of the four.

Directions:
Add sugar to the frozen berries and let the mixture thaw. Drain berries and reserve 1/2 a cup of the syrup. Blend reserved syrup, the orange peel, cornstarch and cinnamon. Cook thoroughly, then stir the berries into the sauce. Cool slightly. In a large bowl, swirl the berry mixture into the softened ice cream, then turn it into the pie shell. Freeze for six hours minimum or overnight. You won't be disappointed with teh result.
